Watercress Soup
Serves: 2
Ingredients:
1 tbsp Vegetable or Sunflower Oil1 small or half a large onion, finely chopped
1 clove Garlic (optional), finely sliced
Large bunch watercress
1 Bay leaf
1 pint Chicken or Vegetable Stock
Salt & pepper
100ml Cream
Method:
1.Gentle sweat the onion and garlic in the oil for 5 minutes.2.Add the stock, Watercress, Bay Leaf and salt, allow to simmer gentle for 5 minutes.
3.Remove the Bay Leaf, blend the soup, add plenty pepper and stir in the cream. Serve immediately with warm bread.
