Chicken Caccacoria

Serves: 2

Ingredients:

2 tbsp Olive Oil
4 pieces chicken, thighs & drums
4 rashers bacon
1 small or half a large onion, finely chopped
1 stalk celery, sliced
3 cloves garlic, finely sliced
2 tbsp chopped rosemary
White Wine
400g Tin chopped tomatoes
Salt & pepper
1 tsp sugar

Method:

1.Use 1 tbsp oil and brown the chicken pieces, remove from pan.
2.Fry the bacon and also remove from the pan.
3.Gentle sweat the onion & celery in the remaining oil for 5 minutes before adding the garlic and herbs.
4.Pour in the wine and deglaze the pan then add the tomatoes and season with salt pepper and the sugar.
5.Add the chicken & bacon and bake for 20 - 30 mins.
