Jambalaya
Serves: 2
Ingredients:
1 tbsp Vegetable or Sunflower Oil2 Chicken breasts diced
1 small or half a large onion, finely chopped
2 cloves Garlic (optional), finely sliced
½ tsp smoked paprika
½ tsp jerk seasoning, or use nutmeg, ginger and cinnamon
1 cup rice
1 pint Chicken or Vegetable Stock
4 chopped tomatoes
Salt & pepper
Method:
1.Brown the chicken and remove from the pan.2.Gentle sweat the onion and garlic in the oil for 5 minutes.
3.Add the paprika and jerk seasoning then add the rice and fry until translucent.
4.Quickly add ½ the stock season and stir then add the remaining stock and leave it alone until the rice is almost cooked
5.Add the chicken back in for the last few minutes of cooking, then remove from heat and allow to rest with a lid on for 10 mins.
