Corned Beef Hash
Serves: 2
Ingredients:
4-6 Potatoes, peeled and chopped1 tbsp Vegetable or Sunflower Oil
1 small or half a large onion, finely chopped
Tin corned beef
Salt & pepper
100ml Cream
Method:
1.Cook the potatoes ‘gently’ in salted water and allow to cool before further cooking.2.Prepare the corned beef and onion and set aside.
3.Once cooled slightly, fry the potatoes in medium - hot oil to brown. Remove from pan and gently fry the onion.
4.Add the corned beef and fry for a few minutes then add back the potatoes and finish in the oven or under the grill.
Tip: cooking the potatoes first ensures they are crispy, if the onions are cooked first they release too much water and the potatoes won’t crisp up.
