Corned Beef Hash

Serves: 2

Ingredients:

4-6 Potatoes, peeled and chopped
1 tbsp Vegetable or Sunflower Oil
1 small or half a large onion, finely chopped
Tin corned beef
Salt & pepper
100ml Cream

Method:

1.Cook the potatoes ‘gently’ in salted water and allow to cool before further cooking.
2.Prepare the corned beef and onion and set aside.
3.Once cooled slightly, fry the potatoes in medium - hot oil to brown. Remove from pan and gently fry the onion.
4.Add the corned beef and fry for a few minutes then add back the potatoes and finish in the oven or under the grill.

Tip: cooking the potatoes first ensures they are crispy, if the onions are cooked first they release too much water and the potatoes won’t crisp up.
