Pear, Walnut & Stilton Salad
Serves: 2
Ingredients:
1 Bag mixed salad (watercress, spinach, Rocket etc)1 Ripe Pear
2 Handfuls of Walnut halves
80 – 100g Stilton
Salad Dressing:
3 Parts Olive Oil (or 2 parts Walnut oil to 1 part Olive Oil)
1 part acid, either lemon juice, white wine vinegar or both.
¼ teaspoon mustard powder + ½ tsp mustard seeds
¼ tsp sugar
Salt & pepper
Method:
1.In a non stick pan, gentle dry roast the Walnuts, keeping them moving so they don’t burn. Remove and set aside.2.Slice the pear into wedges and immediately brown in the same frying pan.
3.Arrange the salad leaves, pears, walnuts and crumble over the stilton.
4.Put all the salad dressing ingredients into a jar and shake then pour over the salad.
