Shepherds Pie

Serves: 2

Ingredients:

2 tbsp Vegetable or Sunflower Oil
250g Mince
1 small or half a large onion, finely chopped
1 Beef oxo cube
1 tsp bisto mixed with ½ cup water
Salt & pepper
3-4 large potatoes
Knob butter
2-3 tbsp milk

Method:

1.Use 1 tbsp oil and brown the mince in a hot wide pan. Remove from the pan and set aside
2.Gentle sweat the onion in the remaining oil for 5 minutes.
3.Add the mince back into the pan, crumble in the oxo and pour over the bisto stirring continually until it thickens.
4.Pour into an oven dish and allow to cool.
5.Peel and boil the potatoes in salted water
6.Mash thoroughly and beat in the butter and milk
7.Spread over the cooled mince and bake AT 200°C for 30 mins.
